This advanced automatic titrator and pH meter has a powerful andeffective built-in algorithm to analyze the shape of the pH electroderesponse and determines the reaction completion. By pressing the STARTkey, the instrument automatically conducts an end pointtitration and result is immediately displayed. The HI 84429 has asimple and reliable peristaltic pump to ensure accuracyand repeatability.

The HI 84429 comes with a pre-programmed analysis method designed for Total Titratable Acidity measurements on milk as well as apH electrode, temperature probe, solutions and tubing.

The determination of total acids in dairy products is made accordingto a neutralization reaction; that is the reaction between the acidsfound in dairy products and a base. This type of reaction forms thebasis of titration methods of analyzing acids.Titratable acidity is measured on a degassed sample at the end pointof 8.30 pH. The results are expressed in ºSH, ºTh, ºD or % l.a.

About acidity measurement andits significance in the dairy industry

There are two fundamentally differentconventions for expressing acidity in dairyproducts: titratable acidity and hydrogenion concentration, or pH. The formerexpresses total acidity but does notmeasure the strengths of the acid, whilepH indicates acid strength.

Acidity affects taste, thus this parameteris tested to determine the quality of themilk product. As milk acidity increasesover time, measuring this parameter isalso a means of monitoring storageconditions. Acidity is determined by anend-point titration using sodiumhydroxide (a base) and is defined as theconsumption of base necessary to shiftthe pH value from 6.6 +0.1(corresponding to fresh milk) to adetermined basic pH value. WhilepH 7.0 is the actual point ofneutralization, phenolphthalein iscommonly employed as a color indicatorto determine the end-point of reactionand with it, color change occurs at pH8.3. Titratable acidity is expressed as oneof a variety of units, the use of whichreflects the titration method and strengthof base employed during titration.

ºSH — Soxlet Henkel degrees:obtained by titrating 100 mL of milk with0.25N NaOH, using phenolphthalein asthe indicator. This method is common inCentral Europe.

ºTh — Thorner degrees:obtained by titrating 100 mL of milkthinned with 2 parts distilled water, with0.1 N NaOH, using phenolphthalein as anindicator; Used mostly in Sweden and theCIS.

ºD — Dornic degrees: obtained bytitrating 100 mL of milk thinned with twoparts distilled water, with N/9 NaOH,using phenolphthalein as an indicator.Used mostly in the Netherlands andFrance.

% l.a. — percent lactic acid:obtained as °D divided by 100. Frequentlyused in the UK, USA, Canada, Australiaand New Zealand.

The HI 84429 Mini Titrator makesmeasuring both pH and acidity of dairyproducts possible within one compactunit. The titration method is apotentiometric end-point determinationat a pre-determined pH value. HI 84429mini Titrator eliminates the subjectiveend-point color-change detectiondetermined by the human eye, andinstead employs the sensitivity andaccuracy of a pH sensor, virtuallyeliminating error.

Acidity of dairy products can be expressedin any one of the units described earlier,simply by selecting the desired unit value.After performing a pump calibration withthe supplied standard, you can then maketitrations, expressed in the desired unit,using the same titrant. This eliminatesthe inconvenience of changing tubes,purging the titrant for tube cleaning andbeing sure that you have the right titrantconcentration – thus eliminating wastedtime and titrant. The quantity of sampleneeded is much smaller in comparisonwith the classical method, where 100 mLof product is used.
